Jambalaya Pasta Recipe

Hello, lovelies!

Today I share my recipe for a Louisiana's favorite: delicious Jambalaya Pasta!
It's a must-try, so rich and so easy to make! You'll be proud to serve this one to your loved ones, let that be yourself or anyone else!

Serves: 4-5
Prep time: around 1 hour total

  • 1 tbsp. of canola or extra-virgin olive oil
  • onion, chopped
  • bell peppers, chopped (I like red and yellow)
  • cloves garlic, minced
  • can of diced tomatoes

 Protein and Extras:
  • 2 sausages of your choice, I like Argentinean or spicy Italian, cut in small pieces, about an inch or half an inch wide, half an inch thick
  • boneless skinless chicken breasts, cut into 1 inch pieces
  • 3 1/2 cups chicken (or vegetable) broth
  • 1 tsp. of melted butter
  • 1/2 milk
  • 1 c. shredded cheddar
  • 10 oz. uncooked penne pasta

(For a vegetarian option, skip the sausage and chicken, it's still very tasty!)

  • 1 tsp. of Cajun seasoning
  • Salt to taste
  • Black pepper to taste (I like freshly grounded)
  • Fresh parmesan cheese, for serving
  • Fresh chopped cilantro or parsley, for serving

  1. In a large cooking pan, heat the oil over medium heat. Add the chopped onion and the peppers and cook until the onion is transparent and peppers begin to soften.
  2.  Add the sausages and cook until browned. Then add the garlic and cook for about 30 seconds, then add the Cajun seasoning, salt and pepper to taste and stir often until chicken is golden and cooked all the way.
  3. Add the uncooked penne and stir until it's coated with all veggies and meats.
  4. Add the can of diced tomatoes, including all liquid and the chicken and vegetable broth. Lower the heat and simmer until the pasta is al dente, about 20 minutes when most liquid is absorbed.
  5. Add the butter, milk and cheddar and stir to mix completely.
  6. Turn off heat. Top with fresh parmesan  and herb of choice.

Tip: Serve with a delicious glass of white wine and have a chocolate truffle for dessert. Yum!
